My Favorite Green Smoothie

Whenever I have a green smoothie for breakfast, it inevitably informs how I eat for the rest of the day—probably because I’m on my high horse about downing something healthy right off the bat. I’ve been trying to start my days this way more consistently recently, and after trying several recipes that were honestly kind of “meh,” I landed on this one from Pinch of Yum. Lindsay titled her post about it “The Best Green Smoothie,” and that is not hyperbole—it’s delicious, and it’s quickly become my go-to.

Well, a version of it has, at least. I’ve somehow convinced myself that I’m allergic to mangoes (don’t ask, I don’t know, it’s so weird), so I swap the mango recommended in the original recipe for a banana, and the result is awesome. It’s smooth and cold and creamy and bright, and it’s the perfect way to start the day. Like I said above, when I drink it I always feel better. Here’s the recipe if you’d like to try it, too.

The Best Green Smoothie

Adapted from Pinch of Yum

1 cup almond milk
1 banana, sliced
1/2 cup (or a little more—I totally eyeball this) frozen peach slices—I get mine at Whole Foods
Handful of kale, stems removed (I use curly kale)
1/2-inch slice of peeled fresh ginger
Drizzle of honey, to taste (best if it’s raw/local!)

Add everything to your blender and blitz to combine. (I like my green smoothies really smooth, almost juice-like, so I blend mine for about 30 seconds and then turn our Vitamix waaaaay up for about 15 seconds to remove any chunks of fruit or kale.) Pour into a glass and drink immediately. So good.
